大年初六/ Dinner is Ready!

It had been almost a week since I cooked for my darlings due to the exhaustion from many long-hours visits for LNY. Finally have the motivation to cook!!

Went Greenwich for breakfast @ Toast Box before grocery shopping @ Cold Storage.

Ordered a bowl of Mee Siam and Iced Tea. Mee Siam is a malay dish whereby Assam is the core ingredient used to create the sauce. BeeHoon, Tau Pok, Hard-Boiled Eggs, Spring Onion, Lime are also added to complete the dish. I like the Iced Tea from Toastbox as they are prepared using the traditional “Coffee Sock” which have become a heritage of authentic tea making.

Time for Grocery Shopping & Cooking-In-Progress.

Prepared 2 new dishes, 1 soup (hubby’s fav) and 2 baked meats.

A) French Beans

Ingredients:
1. 250g french beans
2. 50-100g of minced meat
3. 2 tsp of salted radish
4. 1 tsp of minced garlic
5. 5 pcs of seedless chilli padi

Method of Cooking:
1. I add 1 tbsp of extra virgin olive oil to preheat the pan, follow by the minced garlic, chilli padi and radish to bring out the flavours.

2. After the ingredients in (1) have turn light brown, add in the minced meat.

3. Lastly, add in the French Beans and 2 tbsp of water / chicken stock. Let it cook for about 3-4 mins to soften the French beans, yet remaining crisp. Serve it hot!!

B) Nonya Sambal Seafood

Ingredients:
1. Sotong
2. Scallops
3. 1 tsp of minced garlic
4. 1 pack of sambal paste

Method of Cooking:
1. I add 1 tbsp of extra virgin olive oil to preheat the pan, follow by the minced garlic.

2. Add in the seafood and pan-fried for 45 secs.

3. Add in the sambal paste with 2 tbsp of water/ chicken stock. Let the paste dissolve well and lightly fry with the seafood so that the scallop will not break apart. Then, let it boil before serving it!

C) Spare Ribs Soup

Ingredients:
1. Carrots
2. Potatoes
3. 3-4 pcs of spare ribs
4. Chinese Herbs (红枣、党参、苟纪)

Method of Cooking:
1. Bring to boil about 3 litre of water (level depending on how much you want to consume).

2. Wash the spare ribs and steam it for about 20 mins. I’ll usually place the ribs in a bowl for the essence to be collected during steaming. After which, add the essence with the ribs into the soup. This will help sweeten the soup.

3. Once the water is boiling, add in the chinese herbs, carrots and potatoes (peeled and cubed) and let it boil for 60 mins.

4. Add in the steamed spare ribs (after 20 mins) and continue boiling the soup.

5. After an hour, turn off the fire and let the soup simmer. If served later, just reheat the soup.

D) Breaded Cod Fish Fingers & Chicken Patty

These are frozen food as they can be defreeze and cook in your preferred quantity as-and-when needed. I have a fussy baby so I’ll normally buy fresh and frozen food depending on availability.

Cooking for family is easy if you know the right ways. It take practice to reduce the preparation and cooking time. So pick up your apron now!!
