Christmas Season is here!!

Wow!! Every month passed by real quickly and we are already in the Christmas Season!!

I’ve experienced a busy and “unorganized” year especially with a new addition into the family in the 2nd quarter. Being a full time stay home mum & entrepreneur is indeed challenging. Many ideas have been stalled for quite a while and I guess this Christmas Season is time to reactivate my “working” mode.

I’ll be writing more and (hopefully) add in a new recipe every week to share with everyone. 

Lately, we have changed the home cooking routine from 2X per week to 5X per week. 

First, it is cost saving. Next, it is healthy consumption since I know what goes into the dishes I cook with freshly bought ingredients on a daily basis. Because of the privilege to work from home, I get some morning hours to go grocery shopping with the baby. Thus, I love the fact that I can get fresh ingredients at my convenience, anytime.

Rice is an essential part of my lifestyle due to breastfeeding. So today, I will be sharing with you my recipe of Fried Rice & Homemade Teriyaki Salmon.  


Fried Rice

Ingredients:

  • 2 cups of Rice : 2.2 cups of Water
  • 4 Large Free Range Eggs 
  • 1/4 cup of Mixed Vegetables
  • 1/4 cup of Bak Kwa (Grilled Minced Pork)

  

Tips

# I would recommend a ratio of Rice Vs Water to be 1:1.2 if you are using a rice cooker like I do. For those of you who is using the stove to cook rice, you would probably have to add more water.

# Recommended overnight rice. Otherwise, cook the rice a few hours before serving so that the rice are not too “wet” to be stir fried.

Method of Preparation:

  1. Cook your rice beforehand.
  2. Heat up the wok with oil.
  3. Cut the Bak Kwa into mini size. Add in the Bak Kwa to “fry” for about 30 seconds.
  4. Beat your eggs (I’d add light soy sauce and black pepper) before adding them into the wok. Then stir to break them up.
  5. Next, add in the cooked rice and keep mixing to get the rice coated with the eggs. 
  6. Serve hot with pickled green chilli (chopped).

  

    Homemade Teriyaki Sauce & Salmon

    Ingredients:

    • Salmon
    • Teriyaki Sauce

    How to prepare your own homemade Teriyaki Sauce?

    Marinating Ingredients:

    • 1 tbsp light soy sauce
    • 1 tbsp sesame oil
    • 1 tbsp white wine vinegar / mirin
    • 2 tbsp maple syrup / honey 
    • Ginger slices *(optional)

    Tips

    # Marinate the salmon with the homemade Teriyaki Sauce for at least 15mins or preferably overnight.

    # Always put the salmon away from you when lowering it into the hot pan.

    # Always keep an eye once you have added the marinated teriyaki sauce into the wok to prevent burning because of the maple syrup/ honey.

    Method of Preparation:

    1. Heat up the wok with oil.
    2. Pan fried salmon for 1-2 minutes to get the skin crispy.
    3. Flip it over and add in the marinated teriyaki sauce.
    4. Put on the lid and let it cook 4-5 minutes. 
    5. Serve hot with the sweet glaze drizzled onto the salmon.
