Recipe | No Bake Oreo Cheese Cake

A month ago, I posted the recipe for (No Machine) Oreo Ice Cream that is easy to make with only 2 core ingredients : Heavy Cream & Condensed Milk.

And today, I’ll be sharing my recipe for No Bake Oreo Cheese Cake which consists of:

A) Oreo Biscuit Base

B) Oreo Cheese Cake Filling

C) Chocolate Gaunche

A) Oreo Biscuit Base

  • 137g of Oreo biscuits (approx. 1.5 packs) excluding the cream*.
  • 60g of unsalted butter (melted)

* Keep the chocolate cream for the Oreo Cream Cheese Filling

B) Oreo Cream Cheese Filling

  • 1 cup of mini Oreo
  • 500g of Cream Cheese (softened)
  • 170g of All Purpose Cream
  • 6 tbsp of caster sugar
  • 2 tbsp of light brown sugar
  •  2 tsp of vanilla extract

C) Chocolate Ganache Ingredients:

  • 1 /2 cup of semi-sweet chocolate chips
  • 1/2 cup of 60% cocoa chocolate chips
  • 1 cup of heavy cream
  • 25g of unsalted butter

Method of Preparation:

A) Oreo Biscuit Base

  1. Separate the Oreo Biscuits from its Cream to get the desired weight (137g) needed to make the biscuit base.
  2. Crush the biscuits into “fine sand” consistency.
  3. Add in the melted butter and mix to achieve a “wet sand” consistency.
  4. Pour the biscuit mixture into the desired mound and push it down firmly using your palm.
  5. Put it into the fridge (for at least 10 mins) till your cream cheese filling is ready.

B) Oreo Cream Cheese Filling

  1. Beat the cream cheese and sugar for approx. 5 minutes till the sugar is well dissolved.
  2. Add in the all purpose cream.
  3. Add in the vanilla extract.
  4. Add in the Oreo cream filling.
  5. Add in your crushed mini Oreo (together with its filling).
  6. Remove the Oreo biscuit base from the fridge and pour in the Oreo Cream Cheese filling.
  7. Put it back into the fridge and prepare your chocolate gaunche.

# A trick to know if the sugar is dissolved is to take the mixture and rub between your fingers. If you still feel the granulated sugar, let it beat for a couple more minutes.

C) Chocolate Gaunche

  1. Place the chocolate chips and butter into a heat proof bowl.
  2. Bring your heavy cream to a simmer over a saucepan.
  3. Remove the heavy cream (from the heat) once it simmer and pour it over the chocolate chips and butter. Leave it to soften for about 5 mins before stirring.
  4. After 5 mins, stir the chocolate mixture till well combined.
  5. Leave it to cool for a couple of mins before pouring it on top of the Oreo cream cheese filling.
  6. Let it chill for 8 hours or overnight (preferably) since no gelatin is added.

It is a simple recipe which you can get the little ones to help out. As a parent, I like to experiment with recipes and improvise them to involve the little ones. This helps in building a stronger parents-child relationship through engaging them in fun hands-on activity which also allows them to acquire new knowledges.

I’ll be sharing on our staycation for 2015 in the upcoming blog. So do stay tune.

That’s all for today. Feel free to give my recipe a try and send me pictures via tag on my Facebook/ Instagram/ Twitter/ Google+ or leave your comments below to let me know how it turn out.
